This breakfast is popular in Delhi and Uttar Pradesh (specially in Agra, Mathura, Banaras). You will find it as a street food there.
Bedmi Puri Recipe – a coarse urad dal paste aka pithi is made and added into the dough to make pooris. So it is also known as urad dal puri. These bedmi puri are served with rasedar aloo ki sabzi as a breakfast or brunch. This combo is called bedmi aloo recipe.
Ingredients
For Bedmi Puri -:
Saloni Mustard Oil
½ cup soaked urad dal paste
¼ tsp Hing
1 tsp Jeera
3 – 4 Chopped Green Chillies
1 tbsp Besan (Gram Flour)
¼ tsp Haldi
½ tsp Red Chilli Powder
½ tsp Dhania Powder
Salt as per taste
½ tsp Amchur Powder
2 cup atta
4 tbsp Sooji
Pinch of Ajwain
Pinch of Kasuri Methi
Oil for Moin (Refind Oil or Vegetable Oil)
Water
For Aloo ki Sabji -:
5 – 7 tbsp Saloni Mustard Oil
¼ tsp Hing
1 tsp Jeera
1inch Chopped Ginger
3-4 Chopped Green Chillies
½ tsp Haldi
2 tsp Red chillies
1 tsp Dhania Powder
Puree of 6 tomatoes
Water
Fresh Coriander
Method
First soaked Urad Dal For 4 Hours, Make a paste of the soaked urad dal with using of minimum water.
Heat Saloni Mustard Oil in an non-stick pan, add Hing, Jeera, Green Chillies, Besan and Saute on a medium flame.
Now Add urad dal paste, haldi, Red Chilli, Dhania Powder & salt and saute on a medium flame for few minutes, and add Amchur Powder.
Now your stuffing is cooked, remove it from pan and keep aside for cooling.
Take 2 cup of aata and 4 tbsp of sooji, add salt, ajwain, kasuri methi mix well and add some vegetable oil or Refind oil for moin. Now Add water and make dough, & keep aside for few minutes.
Heat Saloni Mustard Oil in an non-stick cooker, add Hing, jeera, Ginger, Green Chilli, Haldi, Red Chilli, Dhania Powder and cook for few minutes.
Now add Tomato Puree and salt and cook for 15-20 min with cover.
Now add potatoes, water cover with lid and cook until a whistle.
Now Heat Saloni Mustard Oil in an Non-stick Kadhai.
Now make a Pedha with Dough and add urad dal stuffing in it and fry it in Saloni Mustard Oil.
Now mash potatoes and add coriander leaves, mix well.
