Mughlai cuisine consisted of a list of dishes developed in Medieval India at the time of the Mughal empire. Mughlai cooking dishes are an array of recipes from Central Asia and North India. Mughlai food is known for its richness, exotic taste and spiciness.
Nargisi Kofta is another rich exotic Mughlai recipe, a combination dish of mutton keema and boiled eggs but in this video, we are making this dish with chicken keema. Marinated mutton chicken wrapped in hard boil eggs and braised into spicy rich yoghurt gravy is called Nargisi Kofta curry. It can be served with pulao, biryani or roti/parathas. It is suitable for parties or weekend dinners or lunch.
Ingredients
For the Kofta
500gm Chicken Mince
Saloni Mustard Oil for frying
1 medium chopped onion
1 chopped green chilli
1 tbsp ginger-garlic paste
Pinch of fresh coriander
1 tbsp ginger-garlic paste
2 tsp red chilli powder
Salt
2 tbsp maida
1 Egg
Boiled Egg for Stuffing
For the Gravy
2 tbsp Saloni Mustard Oil
½ tsp Dhania
1 tsp jeera
3 elaichi
2 laung
6 chopped medium onions
2 tbsp chopped green chillies
1 tbsp ginger-garlic paste
2 tbsp Kaju
1 tsp haldi powder
2 tsp red chilli powder
2 tsp dhania powder
4 chopped tomato
Salt
Water
1 tbsp fresh cream
Pinch of Kasuri methi
Fresh coriander
Method
For cooking tasty & healthy “Nargisi kofta” at home make gravy first heat saloni mustard oil in a deep non-stick kadhai.
Add whole spices jeera, dhania, elaichi & laung and cook for a few minutes.
Add chopped onion to the kadhai and cook for some time on medium flame until onion cook well.
On the other hand lets make kofta, for kofta take 500gm chicken mince, add green chilli, chopped onion, fresh coriander, ginger-garlic paste, red chilli powder, dhania powder, salt, maida, 1 egg white & mix well.
Make the kofta balls with the chicken minced stuff with boiled egg cover with egg white & yellow mix, maida and deep fry in Saloni mustard oil.
Add green chillies, ginger garlic paste, and Kaju mix well and cook for a few minutes.
Add powdered masala, Haldi, red chilli powder, and dhania powder mix well and cook for a few minutes.
Add chopped onion, and salt mix well covers with the lid and cook for a few minutes.
Add water and blend it very well. Add cream, Kasuri methi & fresh dhania.
